Small-batch Salami:
Salami generally has a longer shelf-life if it's still within the casing (not the wrapper), within the best before date, and kept in the fridge. If you don't get through it all in one sitting, don't stress. Simply wrap the salami in a cheesecloth or place it in a paper bag before putting it back in the fridge. It will continue to firm up over time which will actually improve the flavour and texture (in our opinion!).
Bacon:
If you don't happen to cook it all up in one go then it's best to consume within a few days of opening the pack. Otherwise, place any uncooked portions in the freezer if you want to extend the shelf-life. For the best results, cook it up and enjoy it there and then!
