Smallgoodness didn’t start in a boardroom. It started with a simple idea, done properly. A respect for tradition. A love of flavour. And a belief that great smallgoods shouldn’t be rushed, over-processed, or compromised.

Where It All Started

Back in my early twenties, I started making an annual pilgrimage from Brisbane down to Melbourne every year during the long weekend in early June.

Not for a holiday, but for salami.

What began as a chance to catch up with family quickly became something much more. Each year, we’d spend three to four days focused on salami, family, and seriously good food.

Friday night was all about preparation. Cleaning and readying the casings to get everything set.

Saturday started early. 5am at the butcher, grinding fresh pork legs for the day ahead. Then back home, where the real work began.

Twenty pork legs’ worth of mince, mixed by hand with salt, spices, and wine. Taste testing throughout the morning, adjusting as we went, making sure every batch was perfectly balanced.

No shortcuts. No automation. Just hands, instinct, and experience.

We’d spend the day stuffing casings using a hand-wound sausage stuffer, surrounded by family, friends, and a steady flow of coffee. There was always a proper home-made Sicilian lunch in the middle of it all, followed by a few wines in the afternoon, and a big feast to finish the day.

By the end, hundreds of salamis would be hanging in the carport, left to cure slowly over the following weeks in perfect conditions.

A few weeks later, I’d make another trip back down to collect my share and bring it home to Brisbane... that’s where it all started.
